That freaks me out for some reason. I'm not generally bothered at all by aging. Oh, sure, I cried at 19 and found it to be very traumatic, but no birthday since then has been traumatic at all. I’d ask a neighbor to water them on occasion, otherwise it’s going to be hard to keep them watered for so long.
You could try using gallon milk jugs with a couple pin holes pricked in them to leak out water over time, in each pot, but still 3 weeks is pretty tough.

You will need an automatic watering system for containers. Check with your local nursery or gardening center for these kits.

"There are micorirrigation systems that can water your containers. I think Lowes and other places sell them. They consist of 3/4" plastic hose and emmiters and connecting peices. You can set up a timer and never worry about watering again. It will be hard to hide the hose if you place the containers in the middle of the patio.
Just be aware that it’s very easy to over water succulents and trees. You’ll have to monitor the moisture level for a few weeks before you can leave it alone."
"The folks at Gardeners have a bunch of stuff for drip irrigation. I used a small system for my tomatoes, it worked great.

Lee Valley sells low flow and drip irrigation kits too. Because I’m bone idle, I’m looking at using a rainbarrel feed system so that the system works with as little effort as possible.

Lee Valley has a container watering kit. They also have a kit designed to be used with rain barrels. Because they both connect to a tap it is a fairly simple process to put them on a timer.

I had to go away for a month, and had tomatoes in five gallon buckets. Also had two empty 32 gallon trash cans. I put about 8” of water in each trash can and used 1/8" tubing to create siphons to each tomato plant. Water in the buckets rises to the level of the water in the trash cans. I put lids on the trash cans, and went away. When I got home, both plants were OK, and there was some water left in the trash cans.
On a smaller scale you could do the same thing with gallon jugs or the like. Of course the plant pots would have to have their drain holes plugged. Or you can put the pots in coffee cans
