are you taking the coastal way or the back way, you can cut time drastically by taking the back way, your trip will be a lot more boring, however you will take a few hours off your trip. the back way is the trip through the country side, beginning at shepparton . the best place fro a stop over would be dubbo, its a pretty big town ship with lots of hotels suitable for stop overs. but let me tell you, do not stay at formula one, it’s absolutely repulsive dirt is matted into the bed sheets and there are semen stain on the floor and blankets. dubbo is most popular for stop overs on the way to queensland and is about 12 hours away from melbourne.it also has australias best pies, which are very good
Byron Bay is really nice and the coastal road is the longer alternative but way better than driving inland. Just make some stops in places like Apollo Bay, Sydney (!), port macquarie, coffs harbour etc there are som many nice places to stop.
